A healither take on fajitas, swapping out the wraps for potatoes and the trimmings for a greek yohurt sauce 727 calories | 43g protein

Ingredients

400g chicken

1 red onion

2 red peppers

400g potatoes

20g fajita seasoning

60g grated mozzerrella

150g 0 fat greek yohurt

1 teaspoon honey

1 tea spoon paprika

half teaspoon cayenne pepper

salt & pepper

Instructions

Step 1

Start off by chopping your potatoes into cubes (leave the skin on)

Step 2

Put them in the air fryer or oven for 25 mins @ 180 degrees

Step 3

Prepare your onions and peppers by slicing

Step 4

Dice your chicken into small chunks and begin frying off. once the chicken has started to cook add in your onions and peppers into the chicken, leave to cook for a couple of minutes.

Step 5

Add in your fajita seasonings and any others you could like.

Step 6

Once the potatoes have cooked add them into a skillet or oven proof dish and top with the chicken and veg fajita mix sprinkle mozzarella on top and pop in the oven until it fully melts and serve with the sauce on the side for dipping ❤️
