Ingredients
creme fraiche
baby spinach
truffle pasta paste
chicken breast
lazy garlic
parmesan
pasta

red onion
Instructions
Step 1
Pound the chicken breast until it’s about an inch thick.
Step 2
Stir an egg and pour onto a plate and pour some panko crumbs on another - you can add in seasonings for the crumb here
Step 3
Cover the chicken breast with egg on both sides then cover with panko crumbs
Step 4
Stick in the oven for about 25 minutes at 190
Step 5
Set water to boil for the pasta once boiled, add in pasta.
Step 6
Fry off the diced onions and add in lazy garlic then add in the spinach and leave to wilt. add in the truffle pasta paste, creme fraiche and parmesan and stir. once combined add in some pasta water.

Add in any extra seasonings you like

When the pasta is al dente drain and add into the sauce and leave the pasta to finish cooking in the sauce.

Once the chicken is cooked remove from oven and slice into strips.

Serve pasta and chicken and sprinkle some parmesan.
