Ingredients
parmesan
3 egg yolks
2 cloves of garlic
1 packet of smoked pancetta
salt
1/2 pot of light double cream
pepper
truffle oil
200g spaghetti
Instructions
Step 1
Weigh out your 200g of spaghetti and dump into a saucepan of boiling water
Step 2
Add salt to the water (you want at least a teaspoon)
Step 3
Take your yolks out of your eggs and put into a mixing bowl (i used a big mug)
Step 4
Pour the lots of parmesan into the mug to your satisfaction and add pepper. leave to one side.
Step 5
Whack your hob on full blast and heat up a frying pan for the pancetta. wait until hot and chuck in those cubes of gold. probably want to turn down the hob a bit at this point and add your garlic after about 3 mins.
Step 6
Whilst your pancetta is frying, add the cream to the mug of love
Step 7
When your spaghetti is good and ready, take a small amount of the water to one side, drain the rest and pour a bit of truffle oil into the spaghetti to stop it sticking
Step 8
Important: turn the hob off for the pancetta at this point.
Step 9
Put the spaghetti and the small amount of starch water into the frying pan with the pancetta and mix it in.
Step 10
Then add your sauce and mix!
