Ingredients

150g pasta

1 red onion

2 chicken breasts diced

2 teaspoons minced garlic

2 tablespoons mascarpone

2 handfuls of spinach

30g tomato purée

cayenne pepper

paprika

40g parmesan

garlic pepper

Instructions

Step 1

Fry off the chicken and season with salt & pepper, cayenne pepper, garlic pepper and paprika

Step 2

Once cooked add in the red onions and wait until softened. add in the spinach to wilt.

Step 3

Put the pasta onto boil

Step 4

Add in tomato purée to the chicken and red onion mix

Step 5

Once combined add in the mascarpone and stir in, add in the parmesan and pasta water and leave to thicken.

Step 6

Drain the pasta once cooked, stir into the sauce and serve.
