MUSHROOM UDON NOODLES

Ingredients

200g udon noodles

2 cm lemongrass chopped

1.5 cm fresh ginger grated

1/2 cup coconut milk

2 cups mushrooms of choice

salt & pepper

1 tbs vegetable oil

Instructions

Step 1

Heat an oil in a skillet and fry mushrooms until golden brown, add ginger, lemongrass and coconut milk, thicken to desired consistency.

Step 2

Add the cooked udon noodles to the skillet and toss them in a sauce until well coated.

Step 3

Serve with your favorite herbs, greens, seeds on top. i used fresh mint, spring onion and sesame.
