Spicy Tuna Crispy Rice Bites

Brought my favorite local sushi restaurant to my kitchen this weekend and it did not disappoint whatsoever. These spicy tuna crispy rice bites were so good and surprisingly so easy to make. To say I’m just addicted is an under statement considering I’m going to get more ahi tuna as we speak.

Ingredients

1 tsp kosher salt

1 tsp sesame oil

1 hyphen 2 tbsp sriracha sauce

2 hyphen 3 tbsp soy sauce

1 lb sushi grade ahi tuna

3 tbsp rice vinegar

1 avocado

2 tsp sesame oil

1 cup sushi rice

1 ½ cup water

1/4 cup spicy mayo

3 stalks scallion

1/2 lemon juiced

Instructions

Step 1

Let's start by making the sushi rice!

Step 2

Wash rice 3-4 times or water runs clear.

Step 3

Add rice and water to pot, cover and bring to a boil over medium-high heat. once boiling, boil for 10 minutes, then lower the heat and cook for an additional 5 minutes. turn off the heat and let the rice stand for an additional 5-10 minutes with the lid still on.

Step 4

When rice is done, season with rice vinegar, sugar, sesame oil, and kosher salt.

Step 5

Place down some plastic wrap in a baking dish and evenly cover the dish with rice. leave in the fridge until firm (about 1 hour). take the baking dish out of the fridge and cut rice into desired shape for crispy rice.

Step 6

Preheat a large skillet over medium heat with avocado oil or cooking fat with enough oil covering the bottom of the pan and it's about ¼ inch high.

Step 7

Carefully add the shaped sushi rice and cook for 3-4 minutes on each side or until golden brown. do not overcrowd the skillet because the rice will stick to each other.

Now to make the spicy tuna!

Dice tuna into small bite size pieces.

Step 10

Once tuna is diced, place in a bowl and add in the mayo, sriracha, soy sauce, sesame oil, lemon juice, and some scallions.

Step 11

Assemble the crispy rice first adding avocado on top, then spicy tuna mixture and the rest of the scallions as an extra garnish.

Serve with soy sauce and enjoy!
