Tomato Cream Pasta

Few things in life are as satisfying as a long, stretchy cheese pull.

Ingredients

2 tbsp tomato paste

salt pepper chilli flakes dried basil

3 hyphen 4 cloves of garlic

1 tsp butter

90g pasta

1 small onion diced

1/2 tbsp olive oil

1/4 cup heavy cream

2 tbsp mozzarella

Instructions

Step 1

Boil the pasta till al denté. save a cup full of pasta water.

Step 2

Sauté the onion and garlic in the olive oil until softened, add some chilli flakes too for some extra kick.

Step 3

Then add the tomato paste and let it cook for about 5 minutes.

Step 4

Add some pasta water and stir a bit, then add the heavy cream and the spices and stir.

Step 5

Cook for another 5 minutes, add a bit more pasta water if needed.

Step 6

Finally add in your pasta (pro-tip: pour the pasta water over the pasta to make it unstick), the tsp of butter and mix it up.

Step 7

Top with the cheese, give one final stir and serve with additional chilli flakes on top.
