easyThis pasta recipe is one of my most favourites. It consists of a delicious spinach and cream cheese sauce. Adding tomatoes and mushrooms adds a wonderful touch to the dish. The best part I think is that it’s so healthy and packed with iron so a win-win situation honestly.
Ingredients
1/4 cup mushrooms
4 tbsp cream cheese
1 tsp olive oil
1 medium tomato diced
salt pepper dried thyme & basil and chilli flakes
3 hyphen 4 cloves of garlic minced
3 cups spinach
90g spaghetti
Instructions
Step 1
Boil the pasta until al denté. save a cup of pasta water.
Step 2
Add half of the olive oil to your heated pan, then add half the garlic and sauté a bit.
Step 3
Add the spinach and sauté until it’s cooked. take it out and blend it along with the cream cheese and a bit of pasta water.
Step 4
Sauté the remaining garlic in the remaining olive oil until softened (add chilli flakes for an extra spice kick).
Step 5
Add in the blended spinach paste, the diced tomatoes, the mushrooms and the spices and cook for about 10 minutes.
Step 6
Add a bit of pasta water too as it cooks.
Step 7
Finally add in the boiled pasta to the pan (tip: pour some pasta water over it to make it unstick). give it a mix. serve with additional chilli flakes and a bit of parmesan cheese, if you have it, on top.
