Single-serve pistachio cupcakes

Something about pistachio-flavoured stuff just tastes so luxurious (not hard to guess why considering how expensive pistachios are 🤣). These pistachio cupcakes are going to leave you licking your fingers!

Ingredients

3 tbsp milk

2 tsp pistachio spread/pistachio butter

2 hyphen 3 drops of vinegar optional

1 tbsp powdered sugar/sweetener

1 tbsp sugar/sweetener

1 tsp pistachio spread/pistachio butter

3.5 tbsp flour

pinch of salt baking soda baking powder

5 tbsp cream cheese

Instructions

Step 1

Add the vinegar to milk and leave it for about 10 minutes to make buttermilk

Step 2

Mix the dry and wet ingredients mixtures together

Step 3

Add to one big or two small oiled muffin liners/ muffin pan

Step 4

Microwave for 1 minute 20 seconds or bake for 15-20 minutes at 180 degrees celsius

Step 5

Make the frosting by mixing all ingredients together and whipping it using a whisk

Step 6

Allow the cupcakes to cool to room temperature before frosting them

Step 7

Either eat them immediately or you can refrigerate for a bit and enjoy cold - taste great either way!
