Whip up a batch of fluffy Oat Pancakes for a wholesome start to your day. Mix 1 cup oat flour, 1 cup oat milk, 1 egg, 2 tsp baking powder, and 3 drops of vanilla. Let the batter sit for 15 minutes to thicken. Cook each side for 1-2 minutes. Serve with Greek yogurt, raspberries, and a drizzle of maple syrup. A simple, healthy, and delicious breakfast option!

1 cup oat milk

Combine all ingredients into a bowl.

Step 2

This is the important bit… let the batter sit for 15 minutes allowing it to thicken so you have fluffy pancakes.

Step 3

Cook for 1-2 minutes on either side, i topped mine with greek yogurt, raspberries and maple syrup.
