Mini Date and Ginger loaves

I don’t know what it is but isn’t everything in smaller form that much more delicious? Grab and go and you keep going back for more

Ingredients

85g unsalted butter softened

1 tsp bicarbonate of soda

2 medium eggs

125g chopped dates

115g soft light brown sugar

55g demerara sugar

15g crystallised ginger

145g self raising flour

180ml boiling water

55ml double cream

2 tsp ground ginger

Instructions

Step 1

Chop your dates and add your bicarbonate soda and soak for 10-15 in boiling water.

Step 2

Cream together your sugars and butter until light in colour.

Step 3

Add in your ginger, flour and eggs. stir until combined.

Step 4

Next mix in your soaked dates, mixed should be a more runny consistency. grab your mini loaf tin and portion out your mixture. bake at 180 degrees for 12-14mins.

Step 5

Whilst baking - add your remaining butter sugar to the pan and stir until combined, off the heat add in your cream and continue to stir until you’ve achieved a thick toffee texture.

Step 6

Top your loaves with the toffee sauce once cooled.
