This lasagne soup is the ultimate winter comfort food! It all comes together in one pot, and costs less than $20 to make

Ingredients

1 litre chicken broth

1 carrot grated

1 cup milk

1 cup mozzarella cheese shredded

1 onion diced

250 g lasagne sheets

1 jar passata

italian seasoning

500 g sausage removed from casings

Instructions

Step 1

In a large pot, saute the onion and carrot for about 5 minutes. add the sausage and cook until browned.

Step 2

Stir in the passata, broth, herbs, salt, and black pepper. bring the mixture to a boil.

Step 3

Add the broken lasagne sheets to the pot and reduce the heat to a simmer. cook for about 10-12 minutes, or until the pasta is tender.

Step 4

Just before the pasta is fully cooked, stir through the milk. ladle the soup into bowls and sprinkle each serving with a generous amount of mozarella.
