Ingredients
1kg pork belly
80g minced shallots
ground black pepper
2.5 tbsp fish sauce
Instructions
Step 1
Cut the pork into medium sized cubes and marinate with minced shallots, fish sauce and ground black pepper. leave for 15 mins.
Step 2
Stir continuously 7 tbsp (65-70g) white sugar on low heat until it melts, caramelizes and turns darker in color (it burns quickly so make sure u pay attention). add in the pork and stir so the dark sugar color coats the meat.
Step 3
Add in 300ml fresh coconut water and water, and on medium heat, braise for 1.5 hours
Step 4
Once your meat is tender, add in boiled eggs and stir gently. let cook for another ~10 mins, then serve with steaming hot white rice
