Vegan harissa, “egg” + cress sandwich

VEGAN HARISSA, “EGG” + CRESS SANDWICH

The classic egg and cress sandwich filling is pretty great, but the addition of harissa just takes it to a new level.

Ingredients

salt pepper

120g silken tofu

250g extra firm tofu

lettuce

salad cress about 20g

60g vegan yoghurt i used alpro greekstyle

1 tbsp nutritional yeast

1/2 tsp black salt

4 slices of bread

1/2 tsp dijon mustard

2 tbsp harissa paste

1/4 tsp turmeric

zest of 1/2 lemon

1/2 tsp garlic powder

Instructions

Step 1

Crumble the firm tofu into a bowl. add the silken tofu and mash everything together with a fork.

Step 2

Stir in the rest of the ingredients for the “egg”.

Step 3

Spread 1 tbsp harissa onto a slice of bread, then top with a handful of lettuce, half the “egg” mixture and the salad cress. repeat for the second sandwich. enjoy!
