TOFU POKÉ BOWL

Fresh, colourful and super flavourful. I’ve been having this on repeat recently.

Ingredients

1 tsp maple syrup

juice of 1/4 lime

1/2 carrot peeled into ribbons

2 tsp soy sauce

1 tsp sriracha

1/2 tsp maple syrup

1/2 tbsp water

1 tsp sesame oil

50g frozen edamame beans

1 tsp soy sauce

1 tsp sesame seeds

1/4 cucumber diced

60g sushi rice

1/2 block of tofu 140g cubed

50g red cabbage shredded

1 tbsp tahini

1 hyphen 2 radishes sliced

Instructions

Step 1

Cook the sushi rice according to packet instructions. cook the edamame beans in boiling water for 3 minutes, then drain.

Step 2

Stir all the ingredients for the tofu together in a bowl, then air fry the tofu at 200c for 10 minutes.

Step 3

Mix all the ingredients together for the spicy tahini sauce.

Step 4

Assemble your poké bowl with the sushi rice, red cabbage, carrot ribbons, cucumber, edamame beans, radishes, and tofu. then pour over the spicy tahini sauce and top with the sesame seeds.
