easyProbably the most un-boring salad you will ever try. I could literally drink the spicy miso dressing in this. It’s also super high in protein and a great one for meal prep!
Ingredients
2 tsp tomato purée
1 tbsp maple syrup
3 tbsp soy sauce
1 garlic clove
300g silken tofu
1 avocado chopped
240g pasta
1 tsp chilli flakes
1 tbsp fresh parsley leaves finely chopped
1.5 tbsp white miso paste
1/2 tbsp olive oil
juice of 1/2 lime
1 tbsp fresh coriander leaves finely chopped
150g romaine lettuce shredded
250g cherry tomatoes halved
200g tempeh thinly sliced into small pieces i use plantpowerfoods
1 tsp smoked paprika
1 tsp maple syrup
1/2 red onion finely chopped
Instructions
Step 1
Stir together all the ingredients for the tempeh “bacon” in a bowl. leave to marinate in the fridge for 1-2 hours.
Step 2
Preheat oven to 200°c. transfer the marinated tempeh to a lined baking tray and bake in the oven for 15 minutes, stirring halfway through.
Step 3
Cook the pasta according to packet instructions, then drain and rinse with cold water.
Step 4
Add all the ingredients for the spicy miso dressing to a blender and blend until smooth.
Step 5
Add the cooked pasta, tempeh “bacon”, lettuce, cherry tomatoes, red onion, avocado, fresh parsley and coriander to a large bowl. pour over the spicy miso dressing and stir to combine. enjoy!
