Kale caesar salad with crispy chickpea “croutons”

recipe is actually adapted from my favorite kale caesar from @basic_kitchen (iykyk🤤)

Ingredients

300 grams grilled chicken breast

250 grams roasted chickpeas

20 grams kale

15 grams parmesan cheese shredded

30 grams caesar dressing

¼ cups pine nuts

Instructions

Step 1

Preheat oven to 350. line a baking sheet with tinfoil & add a (drained) can of chickpeas to the pan.

Step 2

Season with s&p, garlic powder, onion powder, olive oil, & roast for 20 minutes to crisp!

Step 3

While your chickpeas are baking, massage kale in a bowl with olive oil.

Step 4

Toss kale in your caesar dressing.

Step 5

Mix in your pine nuts & parm cheese.

Step 6

Top with your grilled chicken & the crispy chickpea “croutons”, & enjoy! 🫶🏼
