you have to try this green thai curry! 🌱 can be served with rice or noodles.

Ingredients

1 zucchini

mushrooms

1 tbs green curry paste

rice

1 cup coconut milk

1 cup water/vegetable broth

2 tbs vegetable oil

peas

1 tbs soy sauce

handful basil

Instructions

Step 1

A large pot or skillet, heat some oil over medium heat.

Step 2

Add the green curry paste and cook for a minute, stirring it around to release its flavors.

Step 3

Pour in the coconut milk and vegetable broth. stir well to combine, add soy sauce.

Step 4

Add veggies to the pot.

Step 5

Bring the mixture to a simmer and let it cook for about 10-15 minutes, or until the vegetables are tender and the flavors have melded together.

Step 6

In the end add basil and serve with rice or noodles.
