Choc malt coffee cookies

Only needs 90s in the microwave and it’s super delicious + packed with coffee goodness! Vegan, GF with a boost of protein! I used malt extract to replace maple syrup for an extra chewiness and delicious roasted flavour! Instead of choc chips, I chopped up my favourite snack bar made with coffee fruits, super YUM! I made this recipe sugar free by using Erythritol but you can use normal cane sugar. Enjoy these cookies with a cup of freshly brewed coffee and this will be your best afternoon tea I used Republica’s organic instant coffee here which I think is the best I could find in the supermarket Try the recipe ASAP

Ingredients

5 tbsp plain flour

chopped chocolate

1.5 tsp instant coffee

1.5 tbsp sugar

4 tbsp hot water

1 tbsp chocolate protein

1 tbsp saunders malt extract

1 tbsp coconut oil

1 tsp baking powder

Instructions

Step 1

Mix dry and wet ingredients in separate bowls.

Step 2

Add wet to dry ingredients and mix well.

Step 3

Fold in chopped choc or add ins of choice.

Step 4

Divide into 3 small doughs and flatten into cookie shapes.

Step 5

Microwave for 90s. cool slightly before serving.
